Salmon, Avacado, Grapefruit
this was a really yummy combination. i'm not sure i would have ever thought of it myself, but i sure am glad i read about it.
i also got this recipe from my new cookbook Take Three. i adapted it slightly. here's the recipe...
2 large ripe avacados
2 ripe grapefruit peeled
4 fresh salmon fillets
2 tablespoons lemon juice
4 tablespoons olive oil
sea salt and freshly ground black pepper
Place salmon fillets in a baking pan lightly greased with olive oil. Bake for about 30 minutes at 350 F.
Mix together lemon juice, olive oil, and salt and pepper in a large bowl. Peel and cut avacados into chunks and add them immeadiatly to the dressing. Trim any of the white pith from the grapefruit and cut into segments and add them to the dressing along with any extra juices.
To serve place salmon on the plate and top with a big spoonful of grapefruit and avacado.
