Blueberry and Apple Loaf and Moms & Tots
we had moms & tots this morning. andi was still sick so she and dan stayed home together. jodie and i went together. it was nice to get out of the house for an extended period of time. since andi has been sick all week i have been couped up inside the house. last night i made a blueberry and apple loaf to take to moms & tots. i found the recipe in the May 2005 issue of delicious. magazine. it turned out really yummy. i wasn't expecting it to be as good as it was. dan and i had to restrain ourselves from eating the whole thing the evening i made it! all the moms really liked it too. i will definately be making this again.
125g chilled butter, diced, plus extra for greasing
225g self-raising flour
175g caster sugar
2 large eggs, lightly beaten
2 large eating apples, peeled, cored, and thinly sliced
125g blueberries
2 tbsp apricot jam
1. Preheat oven to 190 celcius. Grease a loaf pan.
2. Sieve the flour into a food processor (although I just used my mixer and it worked just fine) with a pinch of salt and add the butter. Whizz until it resembles breadcrumbs. Add the sugar and eggs and whizz again to make a smooth mixture.
3. Spoon half the cake mixture into the loaf pan, then scatter with half the apples and half the blueberries. Spoon over the remaining cake mixture, then scatter with the remaining fruit.
4. Bake for 1 hour, or until risen and firm. To test it, insert a skewer into the center - it should come out clean.
5. Put the apricot jam into a small bowl and microwave the jam on high for 20 seconds to melt. Brush the glaze over the cake as soon as it comes out of the oven. Cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely.
