Blueberry Cheesecake Gateau



andi was given a cookbook recently and this is what she chose to make out of it. she had a great time spreading the filling in and arranging the blueberries on top. here's the recipe...

225 grams self-raising flour
1 teaspoon baking powder
200 grams sugar
200 grams butter, softened
4 eggs
2 teaspoons vanilla
400 grams cream cheese
zest of 2 limes
juice of 1 lime
100 grams icing sugar
200 grams blueberries

Preheat oven to 180 C. Butter a deep 7-inch round cake pan.

Put the flour, baking powder, sugar, butter, eggs, and vanilla into a large bowl and beat with an electric mixer on low until everything is mixed together. Then increase the speed to medium and beat for 2 minutes.

Spoon batter into the prepared cake pan and level the top. Bake the cake for 50-60 minutes or until done. Cool, and then split into 3 layers.

Beat the cheese until soft, then beat in lime zest and juice and icing sugar. Sandwich the cake back together with two thirds of the cheese mixture, and spread the rest on top. Arrange blueberries on top in tight circles around the cake.

hi somer. jenn over here in west london. hope all is well. hey... cake looks yummy. I tried your fried zucchini tonite. trying everything to make anything resembling 'chips' for chi... which he will eat. well no go for him, but matt had eaten 75% of them before I even sat down (still frying!). So thanks!! Couldn't get my batter to stick as well as yours did in the picture though. Hey, noticed the book on your site. Radical hospitalily. looks good. would you recommend. Right now though I'm pretty tired so if it's not easy to get into than I usually end of falling asleep. maybe I could borrow when your through? Anyone else have "dibs?"
Now that the weather has changed perhaps soon we can all meet up in a park some where avec kids! love, jenn x

hi jen. the book is good, but not exactly a page turner. i haven't finished it yet. you're welcome to borrow it. we'd love to meet up sometime!
