Chicken Couscous Soup



the weather got cold this weekend and i was also feeling a little under the weather so i decided to make soup. i kept it really simple because i was making this from what i had on hand. i think the couscous makes a nice change of pace from noodles. here's the recipe...

2 chicken leg quarters
1 onion, chopped
6 cups chicken stock
3/4 cup couscous
spring onions, chopped
olive oil

In a large wide pot heat olive oil. Brown chicken on both sides. Remove chicken from pot. Saute onion until soft. Return chicken to pan. Add the chicken stock. Bring to a boil and simmer about 30 minutes or until chicken is cooked through. Remove chicken and shred. Return shredded chicken to the pot. Sprinkle in couscous. Serve soup with spring onions sprinkled over the top.

What a great idea to use couscous. I'll have to try that sometime.
