Cake Decorating
last week i started taking a cake decorating class. on monday night i had my second class. so far it has been really good and i'm learning alot. today i finished decorating the cake that we started learning how to do on monday. i think it turned out pretty well for my first time. there is still room for improvement. i need to work on getting the icing covering the cake smoother and i had a couple of problems getting the pattern for the rainbow onto the cake, so it ended up being a little bit more freehand. all in all though i'm happy with it.

Hi, Somer! I took a cake decorating class a few years ago, and the secret to getting the icing smooth is icing towels. Can you get those over there? I have never been able to get icing smooth without them! I hope you enjoy the class...I learned so much and have made some really fun cakes.

the instructor told us to smooth it down with parchment paper, which worked really well when she did it. i think the problem was my icing. the ingredients over here are a little different and the instructor had already adjusted the wilton icing recipe for here, but it is really hard to get a hold of shortening. i found out later the shortening i had bought was not 100% fat. hopefully i'll have better luck next time. what are icing towels?

Icing towels are like a very thick paper towel, but each one can be used many times. Basically, after you ice a cake, you let it sit for about 10 minutes, then lightly press the towel onto the icing all around the cake, smoothing the icing as you go. It makes the icing completely smooth and the cake look very professional. I get them from a cake decorating supply store here in Baltimore.

Sarah is sounds like icing towels work similar to how the parchment paper works. I'll let you know how the next cake comes out.
