Coffee Cupcakes with Pecan Brittle

i made these cupcakes about a week and a half ago. i took my coffee cake with pecan brittle recipe and just turned them into cupcakes. the only thing i did differently was to double the filling and the icing. to fill the cupcakes i cut a whole out of the top and filled them and them replaced a little piece of cake back over the filling. this is a little more time consuming than just making the cake, but it is much more fun to have your own individual cake with a surprise waiting inside for you to bite into!
