...recipe from Good Food, 101 Cakes and Bakes
225 grams self-raising flour
1 teaspoon baking powder
200 grams sugar
200 grams butter, softened
4 eggs
2 teaspoons vanilla
400 grams cream cheese
zest of 2 limes
juice of 1 lime
100 grams icing sugar
200 grams blueberries

Preheat oven to 180 C. Butter a deep 7-inch round cake pan.

Put the flour, baking powder, sugar, butter, eggs, and vanilla into a large bowl and beat with an electric mixer on low until everything is mixed together. Then increase the speed to medium and beat for 2 minutes.

Spoon batter into the prepared cake pan and level the top. Bake the cake for 50-60 minutes or until done. Cool, and then split into 3 layers.

Beat the cheese until soft, then beat in lime zest and juice and icing sugar. Sandwich the cake back together with two thirds of the cheese mixture, and spread the rest on top. Arrange blueberries on top in tight circles around the cake.

last week i went with jodie's class to the aquarium. we were supposed to go back in february, but it got cancled because of snow. jodie and her classmates had a great time seeing all the fish and touching some stingrays!

i finally ordered a voltage converter a couple of weeks ago. i can now use my panini press and food processor! i've been enjoying both for a couple weeks now.
